RECIPE: BANANA BREAD

Ahhh, you gotta love a good home-baked banana bread.

  1. They’re delicious.

  2. You get to use up ripe bananas (I seem to always end up with these…).

  3. It makes the house smell amazinggggggggg.

  4. Did I mention delicious?


BANANA BREAD

INGREDIENTS

  • canola oil spray or melted butter for greasing

  • 1 cup plain (or wholemeal) flour, sifted

  • 1/2 cup self raising flour, sifted

  • 2/3 cup brown sugar

  • 1 teaspoon ground cinnamon

  • 2 ripe bananas, mashed

  • 2 eggs, lightly whisked

  • 1/2 cup skim milk

  • 50 g butter, melted

  • 1 ripe banana, sliced in half lengthwise

METHODS

  1. Preheat the oven to 180 C (160 C fan-forced).

  2. Line a loaf pan with baking paper and lightly grease with canola oil spray or melted butter.

  3. In a large mixing bowl, combine the dry ingredients and prepare a well in the centre. In a separate bowl, combine the wet ingredients before adding this to the dry ingredients. Stir until combined.

  4. Pour the banana bread mixture into the prepared loaf pan. Add the two banana halves to the top.

  5. Bake for 45 minutes or until golden and cooked through (check with a skewer). Remove from the oven and wait for at least 5 minutes before moving the banana bread from the pan to a cooling rack.

  6. Slice and enjoy!
